Method
Simple steps
- 01
Use the listed cooked chicken and cooked sweet potato. Season with smoked paprika, garlic, salt and pepper; reheat the chicken to 165°F / 74°C.
- 02
Roast or air-fry the vegetables until tender; add the already-cooked sweet potato to warm through. Use the measured olive oil for the base and higher-carb portions.
- 03
Warm the drained black beans. Stir lemon juice, garlic, salt and pepper into the Greek yogurt.
- 04
Add the sweet potato, vegetables, beans and sliced chicken to a bowl. Spoon the yogurt sauce over the top.
Storage + reheating
Cool the cooked components promptly and refrigerate for up to 3–4 days. Keep the yogurt sauce separate and add it after reheating.
Accuracy notes
- Chicken and sweet potato are listed as cooked weights.
- The lower-calorie estimate assumes cooking spray instead of the teaspoon of oil.
